  • 1 tbsp ginger-garlic paste
  • 1/2 tsp cumin seeds
  • 1 bay leaf
  • 2 cloves
  • 2 green cardamoms
  • 1 cinnamon stick
  • 1 tsp coriander powder
  • 1/2 tsp cumin powder
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • 1/4 tsp garam masala
  • Salt to taste
  • 2 tbsp oil
  • 1/4 cup cream

  • Start by preparing the paneer. Cut the paneer into bite-sized cubes and place them in a bowl. Add cornflour, salt and black pepper powder to the bowl and toss well to coat the paneer cubes.
  • Heat oil in a pan and fry the paneer cubes until they turn golden brown. Once done, take them out on a plate and keep them aside.
  • In the same pan, add 2 tbsp oil and heat it. Add cumin seeds, bay leaf, cloves, green cardamoms and cinnamon stick to the pan and fry for a few seconds.
  • Add sliced onions to the pan and fry until they turn golden brown. Add ginger-garlic paste to the pan and fry for a minute.
  • Add tomato puree to the pan and cook for 2-3 minutes.
  • Add coriander powder, cumin powder, turmeric powder, red chilli powder and garam masala to the pan and mix well.
  • Add salt to taste and mix well. Cook the masala for 3-4 minutes until the oil starts to separate.
  • Add 1/4 cup cream to the pan and mix well. Cook the gravy for 2-3 minutes until it starts to thicken.
  • Add the fried paneer cubes to the gravy and mix well. Cook the paneer in the gravy for 2-3 minutes
  • Garnish the Paneer Do Pyaza with coriander leaves and serve hot with naan, roti or rice.

  • To make the paneer more flavourful, you can marinate it in yogurt and spices for a few hours before frying.
  • You can adjust the spice level according to your taste by adding more or less red chilli powder.
  • You can use store-bought tomato puree or make your own by blending tomatoes in a mixer grinder.
  • If the gravy is too thick, you can add water to thin it down.
  • For a vegan version, you can replace paneer with tofu and cream with coconut milk.
