  • 1 cup milk

  • 1 egg

  • 1 cup grated coconut
  • 1/2 cup jaggery

  • 1 cup strawberries, hulled and sliced

  • 1/4 cup water
  • 1 tsp lemon juice


  • To make the patishapta pancakes, combine the all-purpose flour, semolina, salt, and sugar in a mixing bowl. In a separate bowl, beat the egg and add it to the dry ingredients. Mix well.
  • Gradually add milk and water to the dry ingredients while whisking the mixture until it forms a smooth batter. The batter should have a consistency similar to that of dosa or crepe batter. Cover the batter and let it rest for 30 minutes.
  • To make the coconut filling, combine grated coconut, jaggery, cardamom powder, and cinnamon powder in a saucepan. Cook the mixture over medium heat, stirring continuously until the jaggery melts and the coconut mixture turns slightly sticky. Remove from heat and let it cool.
  • To make the strawberry coulis, combine strawberries, sugar, and water in a saucepan. Cook the mixture over medium heat, stirring occasionally until the strawberries break down and the mixture turns into a thick sauce. Remove from heat and let it cool. Once it cools down, add lemon juice and mix well.
  • Heat a non-stick pan over medium heat and brush some ghee over it. Pour a ladle full of batter into the pan and spread it in a circular motion to form a thin pancake. Cook for a minute until the edges start to lift and the surface becomes dry.
  • Place a spoonful of the coconut filling in the center of the pancake and roll it up into a cylindrical shape. Repeat this process for the remaining batter and filling.
  • Serve the patishapta hot with a drizzle of strawberry coulis on top. You can also garnish it with some sliced strawberries and chopped nuts.
