  • Chicken – 1 kg, cut into small pieces
  • Red chili powder – 2 tsp
  • Turmeric powder – 1 tsp
  • Coriander powder – 2 tsp
  • Garam masala powder – 1 tsp
  • Black pepper powder – 1 tsp
  • Salt – to taste
  • Lemon juice – 2 tbsp
  • Curry leaves – a handful
  • Garlic – 6 cloves, crushed
  • Ginger – 1 inch, grated
  • Green chilies – 4, chopped
  • Onion – 2, finely chopped
  • Oil – for frying
  • Water – 1/2 cup


  • In a bowl, mix together red chili powder, turmeric powder, coriander powder, garam masala powder, black pepper powder, salt, and lemon juice.
  • Add the chicken pieces to the spice mixture and mix well. Make sure the chicken is coated with the spices evenly.
  • Heat oil in a frying pan. Once the oil is hot, add the chicken pieces and fry until golden brown. Make sure to fry the chicken in batches to avoid overcrowding in the pan.
  • Remove the chicken from the pan and keep it aside.
  • In the same pan, add more oil if needed. Add curry leaves, garlic, ginger, green chilies, and onions. Saute until the onions turn golden brown.
  • Add the fried chicken pieces to the pan and mix well. Add water and mix again. Cover the pan and cook for 10-15 minutes on low heat.
  • Open the lid and cook for another 5-10 minutes until the chicken is fully cooked and the water has evaporated.
  • Serve hot with rice or roti.


  • You can adjust the spice level according to your taste by adding more or less red chili powder.
  • Use bone-in chicken for better flavor.
  • You can also marinate the chicken for a few hours or overnight for more flavor.
