  • 1 cup Makhana (Lotus seeds)
  • 1 litre Milk
  • 1/2 cup Sugar
  • 2 tbsp Ghee
  • 1/4 tsp Cardamom powder
  • A pinch of Saffron strands
  • 10-12 Cashews (chopped)
  • 10-12 Almonds (chopped)
  • 2-3 tbsp Raisins
  • A few strands of Chopped Pistachios for garnishing


  • Dry roast Makhana in a pan for about 5 minutes or until it turns crispy. Keep it aside.
  • In the same pan, heat ghee and fry cashews, almonds, and raisins until golden brown. Remove them from the pan and keep them aside.
  • In a heavy-bottomed pan, boil milk on medium flame until it thickens and reduces to half. Stir the milk occasionally to prevent it from burning.
  • Add the roasted Makhana to the milk and stir it continuously until it becomes soft and the milk is fully absorbed.
  • Add sugar and stir well until it dissolves. Cook it for another 5-7 minutes on low flame.
  • Add cardamom powder and saffron strands and mix it well.
  • Finally, add the fried cashews, almonds, and raisins to the mixture and mix it well.
  • Remove the kheer from the flame and let it cool for a few minutes.
  • Transfer the kheer to a serving dish and garnish it with chopped pistachios.
  • Serve it warm or chilled.


  • You can add a few drops of rose water to enhance the flavor of the kheer.
  • You can adjust the sugar according to your taste preference.
  • Do not overcook the Makhana, as it can become chewy and tough.
  • Use a heavy-bottomed pan to prevent the milk from sticking to the bottom.
