How To make Puran Poli? | Instant Puran Poli Recipe

Puran Poli is a traditional Indian sweet flatbread made during festivals and special occasions. It is a popular dish in Maharashtra, Gujarat, Karnataka, and Tamil Nadu. The dish is made by stuffing a sweet filling made from chana dal (split Bengal gram) and jaggery (unrefined cane sugar) inside a soft and thin wheat flour dough. In this recipe, I will guide you through the step-by-step process of making Puran Poli.

Here is a breakfast recipe that is easy to prepare and delicious to eat.

Ingredients

    • 1 cup chana dal
    • 1 cup jaggery
    • 1 cup wheat flour
    • 1/4 tsp turmeric powder
    • 1/4 tsp cardamom powder
    • 2 tbsp ghee (clarified butter)
    • Water as needed
    • Salt as needed

Instructions:

  • To make the filling for the Puran Poli, first rinse the chana dal thoroughly and soak it in water for at least 2 hours.
  • After soaking, drain the water and pressure cook the chana dal with 2 cups of water, turmeric powder, and salt for 4-5 whistles on medium heat. Once cooked, remove from heat and let it cool down.
  • Once cooled, transfer the cooked chana dal into a blender and blend it into a smooth paste. Keep the paste aside.
  • Next, take a pan and add jaggery and 1/4 cup of water. Heat the mixture on medium heat until the jaggery melts and becomes a syrupy consistency.
  • Add the chana dal paste to the jaggery syrup and mix well. Cook the mixture on low heat until it thickens and forms a sticky mass. Add cardamom powder and mix well. Once done, remove from heat and let it cool.
  • To make the dough for the Puran Poli, take a mixing bowl and add wheat flour, salt, and ghee. Mix well. Add water little by little and knead it into a soft and smooth dough.
  • Cover the dough with a damp cloth and let it rest for 30 minutes.
  • After 30 minutes, divide the dough into small equal-sized balls and the filling into small balls as well.
  • Take a dough ball and roll it into a small circle with a rolling pin. Place a filling ball in the center and seal the edges of the dough ball, making sure the filling is completely enclosed.
  • Flatten the dough ball and dust it with wheat flour. Roll it out into a thin circle, around 6-7 inches in diameter.
  • Heat a griddle or tawa on medium heat and place the rolled-out Puran Poli on it. Cook it on both sides until it turns golden brown and has brown spots on it. Spread ghee on both sides while cooking.
  • Once done, remove from heat and serve hot with ghee or milk.

Tips

  • Make sure the chana dal is soaked well before cooking.
  • Adding turmeric powder gives a nice color to the filling.
  • You can adjust the amount of jaggery according to your taste preference.
  • The dough should be soft and smooth for easy rolling.
  • Make sure to dust the dough ball with flour before rolling it out to prevent sticking.
  • Spread ghee on both sides while cooking to get a soft and flavorful Puran Poli.
  • You can also add a pinch of nutmeg powder to the filling for added flavor.

In conclusion, Puran Poli is a delicious and wholesome sweet dish that is loved by people of all ages. It requires a little bit of patience and effort, but the end result is worth it.
