Ingredients

  • 1 cup quinoa
  • 1/2 cup sabudana
  • 1/2 cup sugar
  • 1/2 cup ghee
  • 2 cups water
  • A pinch of saffron
  • 1/2 tsp cardamom powder
  • 10-12 cashews
  • 10-12 raisins

Directions:

  • Rinse the quinoa and sabudana well under running water. Soak them separately in enough water for 3-4 hours. After 3-4 hours, drain the water and keep them aside.
  • In a pan, heat 1/4 cup of ghee on medium flame. Add the cashews and raisins and fry them until the cashews turn golden brown and the raisins puff up. Remove them from the pan and keep them aside.
  • In the same pan, add the soaked quinoa and roast it on medium flame for 2-3 minutes. Then add the sabudana and roast it for another 2-3 minutes. Make sure they don’t stick to the bottom of the pan.
  • In a separate pan, heat 2 cups of water on medium flame. Add a pinch of saffron to the water and let it simmer for a few minutes.
  • Add the simmering saffron water to the pan with the roasted quinoa and sabudana. Mix well and let it cook on low flame for 10-15 minutes or until the water is absorbed and the quinoa and sabudana are cooked.
  • Add sugar to the pan and mix well. Cook for another 5-7 minutes until the sugar has dissolved and the mixture has thickened.
  • Add the cardamom powder, fried cashews, and raisins to the pan and mix well.
  • Turn off the flame and add the remaining ghee to the pan. Mix well until the ghee is fully incorporated.
  • Serve hot or cold.
