Ingredients

For the Rajasthani Kadhi:

  • 2 cups plain yogurt
  • 1/2 cup gram flour (besan)
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp coriander powder
  • 1/2 tsp garam masala
  • 1 tsp salt
  • 2 cups water
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 2-3 dried red chilies
  • 10-12 curry leaves
  • 1 inch ginger, grated
  • 2 garlic cloves, minced
  • 1 onion, finely chopped
  • 2 tbsp coriander leaves, chopped

For the Tofu Palak Pakoda:

  • 1 block firm tofu, drained and crumbled
  • 1 cup spinach leaves, chopped
  • 1/2 cup gram flour (besan)
  • 1/2 tsp cumin seeds
  • 1/2 tsp coriander powder
  • 1/2 tsp red chili powder
  • 1 tsp salt
  • 1/4 cup water
  • Oil for frying

Instructions:

  • To make the kadhi, whisk together the yogurt, gram flour, cumin seeds, turmeric powder, red chili powder, coriander powder, garam masala, and salt in a bowl. Add the water and whisk until smooth.
  • Heat the oil in a pan and add the mustard seeds, cumin seeds, dried red chilies, and curry leaves. Fry until the seeds start to crackle.
  • Add the grated ginger, minced garlic, and chopped onion. Saute until the onion is translucent.
  • Pour in the yogurt mixture and bring it to a boil, stirring constantly.
  • Reduce the heat to low and simmer for 10-15 minutes, stirring occasionally, until the kadhi thickens.
  • Garnish with chopped coriander leaves and keep aside.
  • To make the tofu palak pakoda, mix together the crumbled tofu, chopped spinach leaves, gram flour, cumin seeds, coriander powder, red chili powder, salt, and water in a bowl. Mix well to form a thick batter.
  • Heat oil in a deep frying pan. Once the oil is hot, drop spoonfuls of the batter into the hot oil and fry until golden brown.
  • Drain the pakodas on a paper towel to remove any excess oil.
  • Serve the Rajasthani kadhi hot with the tofu palak pakoda on the side.
