Ingredients

  • 1/2 cup seviyan (vermicelli noodles)
  • 1 liter milk
  • 1/2 cup sugar (or to taste)
  • 2-3 green cardamom pods
  • 1/4 teaspoon nutmeg powder
  • 1/4 teaspoon saffron threads (optional)
  • 2 tablespoons ghee (clarified butter)
  • 1/4 cup chopped nuts (almonds, pistachios, cashews)

Method:

  • Heat a non-stick pan over medium heat and add 2 tablespoons of ghee.
  • Add 1/2 cup of seviyan to the pan and stir-fry for 2-3 minutes, until the seviyan is golden brown.
  • Add 1 liter of milk to the pan and stir well. Bring the mixture to a boil and then reduce the heat to low.
  • Add 2-3 green cardamom pods, 1/4 teaspoon nutmeg powder, and a few saffron threads (optional) to the pan.
  • Stir the mixture occasionally to prevent it from sticking to the bottom of the pan.
  • Once the seviyan is cooked and the mixture has thickened, add 1/2 cup of sugar (or to taste) and stir well.
  • Continue to cook the mixture over low heat for another 5-7 minutes, until the sugar has dissolved and the kheer has thickened.
  • Remove the pan from heat and let the kheer cool to room temperature.
  • Once the kheer has cooled, transfer it to a serving bowl and garnish with chopped nuts (almonds, pistachios, cashews).
  • You can serve the kheer either hot or cold. If serving cold, refrigerate the kheer for at least 1-2 hours before serving.
