Ingredients

  • 1 cup Gram flour (Besan)
  • 2 cups of Water
  • 2 cups of Buttermilk
  • 1 cup Mixed Vegetables (chopped, potatoes, carrots, drumsticks, etc.)
  • 1 Onion (sliced)
  • 2 Green Chillies (chopped)
  • 1 tbsp Ginger-garlic paste
  • 1/2 tsp Mustard seeds
  • 1/2 tsp Cumin seeds
  • 1/4 tsp Fenugreek seeds (methi)
  • 1/4 tsp Turmeric powder
  • 1/2 tsp Red Chilli Powder
  • 1 tsp Coriander powder
  • 1 tsp Cumin powder
  • 1 tsp Sugar
  • 2 tbsp Oil
  • Salt to taste

For tempering:

  • 1 tbsp Oil
  • 1/2 tsp Mustard seeds
  • 1/2 tsp Cumin seeds
  • 1/4 tsp Fenugreek seeds (methi)
  • 2 Dry Red Chillies
  • 1/4 tsp Asafoetida (hing)

Method:

  • In a bowl, mix the gram flour and water together to make a smooth batter. Set aside.
  • In a pan, heat oil and add mustard seeds, cumin seeds, and fenugreek seeds. Let them splutter.
  • Add sliced onions and chopped green chillies. Fry until the onions turn golden brown.
  • Add ginger-garlic paste and fry for another minute.
  • Add the mixed vegetables and fry for 2-3 minutes on medium heat.
  • Add turmeric powder, red chilli powder, coriander powder, cumin powder, and salt. Mix well.
  • Add the buttermilk and 2 cups of water. Mix well.
  • Add the gram flour batter and mix well.
  • Add sugar and let the kadhi come to a boil on medium heat.
  • Reduce the heat and let the kadhi simmer for 20-25 minutes, stirring occasionally.
  • Check the consistency of the kadhi, and if it is too thick, add some more water.
  • In a separate pan, heat oil and add mustard seeds, cumin seeds, fenugreek seeds, dry red chillies, and asafoetida. Let them splutter.
  • Pour the tempering over the kadhi and mix well.
  • Serve hot with steamed rice.
