  • 2 tbsp oil

  • 1 onion, finely chopped
  • 2-3 green chilies, finely chopped
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 1/2 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/2 tsp cumin powder
  • 1/2 tsp red chili powder
  • Salt to taste
  • 1/2 cup water
  • 1/4 cup chopped fresh coriander leaves


  • Begin by selecting four medium-sized sitaphal that are ripe but not overripe. Cut each sitaphal into halves and remove the seeds from the fruit. Set aside.
  • Heat 2 tablespoons of oil in a deep-bottomed pan or kadhai over medium heat. Once the oil is hot, add 1 teaspoon each of cumin and mustard seeds and fry them until they start to splutter.
  • Next, add finely chopped onion and green chilies to the pan and sauté them until the onions turn translucent.
  • Add 1 teaspoon each of ginger and garlic paste to the pan and sauté for a few seconds until the raw smell goes away.
  • Add 1/2 teaspoon turmeric powder, 1 teaspoon coriander powder, 1/2 teaspoon cumin powder, 1/2 teaspoon red chili powder, and salt to taste to the pan. Mix well and sauté for a minute until the spices are well combined.
  • Add the sitaphal halves to the pan and stir gently to coat them with the spice mixture.
  • Add 1/2 cup of water to the pan, cover it with a lid and let the sitaphal cook for 5-6 minutes over medium heat. Stir occasionally to prevent the curry from sticking to the bottom of the pan.
  • Once the sitaphal is cooked and the curry has thickened, turn off the heat and garnish the subzi with chopped fresh coriander leaves.
  • Serve hot with steamed rice or roti.


  • Make sure that the sitaphal is ripe but not overripe, as overripe fruit can be too soft and difficult to work with.
