Ingredients

  • 1 cup mixed vegetables (carrots, beans, peas, potatoes)
  • 1 onion, chopped
  • 1 tomato, chopped
  • 3 garlic cloves, chopped
  • 1/2 inch ginger, chopped
  • 1/2 cup almonds, blanched and peeled
  • 2 cups water
  • 1/2 tsp cumin seeds
  • 1/2 tsp coriander seeds
  • 1/4 tsp black peppercorns
  • 2 tbsp ghee or oil
  • Salt, to taste
  • Fresh coriander leaves, chopped (for garnish)

Instructions:

  • First, prepare the mixed vegetables by chopping them into small pieces. You can use any vegetables you like, but I recommend using a mix of carrots, beans, peas, and potatoes.
  • In a pan, heat 1 tablespoon of ghee or oil and add cumin seeds, coriander seeds, and black peppercorns. Roast the spices for 1-2 minutes until fragrant.
  • Add the chopped onion, garlic, and ginger to the pan and sauté until the onions are translucent.
  • Add the chopped tomato to the pan and cook for 3-4 minutes until it’s soft and mushy.
  • Now add the chopped mixed vegetables to the pan and cook for 5-7 minutes until they’re slightly tender.
  • Add 2 cups of water to the pan and bring it to a boil. Reduce the heat to low and let it simmer for 10-12 minutes until the vegetables are completely cooked.
  • While the vegetables are cooking, blend the almonds in a blender until they’re finely ground.
  • Once the vegetables are cooked, turn off the heat and let it cool for a few minutes.
  • Transfer the vegetable mixture to a blender and blend it until it’s smooth and creamy.
  • Pour the mixture back into the pan and add the ground almonds. Mix well and let it simmer for 2-3 minutes until the soup thickens.
  • Season with salt to taste.
  • Garnish with fresh coriander leaves and serve hot.
