  • In a large pot, combine the soaked chana dal, sunchoke, and enough water to cover the ingredients. Bring the mixture to a boil and then reduce the heat to medium-low. Cover the pot and let the mixture cook until the chana dal and sunchoke are tender, about 20-25 minutes.
  • Once the chana dal and sunchoke are cooked, drain any excess water and transfer the mixture to a large mixing bowl. Mash the chana dal and sunchoke together with a potato masher or the back of a spoon until they form a smooth paste.
  • Add the ginger paste, garlic paste, chopped green chilies, red chili powder, coriander powder, cumin powder, garam masala, and salt to the mixing bowl with the mashed chana dal and sunchoke. Mix all the ingredients well until they are fully combined.
  • Heat enough oil for frying in a large pan or kadhai over medium-high heat. While the oil is heating, shape the chana dal and sunchoke mixture into small patties or kebabs.
  • Once the oil is hot, carefully add the patties or kebabs to the pan, working in batches if necessary. Fry the patties or kebabs until they are golden brown and crispy on both sides, about 2-3 minutes per side.
  • Once the patties or kebabs are cooked, transfer them to a plate lined with paper towels to absorb any excess oil.
