  • 1 cup heavy cream
  • 1/2 cup milk

  • 1/4 cup water

  • In a saucepan, heat the milk and sugar over medium heat until the sugar dissolves. Add the thandai powder and mix well. Remove from heat and let it cool.
  • In a separate bowl, whip the heavy cream until stiff peaks form.
  • In a small bowl, sprinkle the gelatin over the water and let it sit for 5 minutes until it becomes spongy.
  • Place the bowl with the gelatin in a pan of simmering water and stir until the gelatin dissolves completely.
  • Add the dissolved gelatin to the thandai mixture and mix well.
  • Gently fold in the whipped cream until the mixture is smooth and well combined.

  • If you want to make the mousse eggless, you can use agar-agar instead of gelatin. Simply dissolve 1 tbsp agar-agar in 1/4 cup water and add it to the thandai mixture.
