Ingredients

  • 1 cup of grated carrots
  • 1 cup of milk
  • 1 cup of sugar
  • 1/2 cup of ghee
  • 1/4 cup of semolina
  • 1/4 cup of chopped cashews
  • 1/4 cup of chopped almonds
  • 1/4 cup of raisins
  • 1/4 teaspoon of cardamom powder
  • A pinch of saffron
  • A few drops of orange food colorA few drops of green food color

Instructions:

  • Heat a heavy-bottomed pan on medium heat and add 1/4 cup of ghee. Once the ghee has melted, add the grated carrots and sauté them for 5-7 minutes until they become soft and start releasing their juices.
  • Add 1 cup of milk to the pan and bring it to a boil. Reduce the heat to low and let the carrots cook in the milk for 10-15 minutes until the milk has been absorbed and the carrots have become tender.
  • Add 1/4 cup of semolina to the pan and mix it well with the carrots. Cook for another 2-3 minutes until the semolina has been absorbed and the mixture has thickened.
  • Add 1 cup of sugar to the pan and mix well. Cook for 5-7 minutes until the sugar has dissolved and the mixture has thickened.
  • Add 1/4 cup of chopped cashews, 1/4 cup of chopped almonds, and 1/4 cup of raisins to the pan. Mix well and cook for another 2-3 minutes until the nuts and raisins have been incorporated into the mixture.
  • Divide the mixture into three equal parts and transfer each part to a separate bowl.
  • Add a pinch of saffron to one of the bowls and mix well. This will be the saffron layer of the halwa.
  • Add a few drops of orange food color to the second bowl and mix well. This will be the orange layer of the halwa.
  • Add a few drops of green food color to the third bowl and mix well. This will be the green layer of the halwa.
  • Grease a round or square dish with ghee. Pour the saffron layer of the halwa into the dish and spread it evenly.
  • Pour the orange layer of the halwa on top of the saffron layer and spread it evenly.
  • Finally, pour the green layer of the halwa on top of the orange layer and spread it evenly.
