Ingredients

  • 12 lasagna noodles
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 4 garlic cloves, minced
  • 1 pound ground beef or lamb
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 cups tomato sauce
  • 1 cup ricotta cheese
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped fresh parsley
  • 1/4 cup grated parmesan cheese
  • 1/2 cup grated mozzarella cheese
  • 1/2 cup grated cheddar cheese
  • 1/2 teaspoon saffron strands
  • 1/2 teaspoon turmeric powder
  • 1/2 cup frozen peas, thawed
  • 1 cup spinach leaves, chopped
  • 1/4 cup milk

Instructions:

  • Preheat your oven to 375°F (190°C).
  • Cook the lasagna noodles according to the package directions. Drain and set aside.
  • Heat the olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, and sauté until the onion is soft and translucent, about 5 minutes.
  •  Add the ground beef or lamb, salt, and pepper to the skillet. Cook, breaking up the meat with a wooden spoon, until the meat is browned and cooked through, about 10 minutes.
  • Add the tomato sauce to the skillet and stir to combine. Reduce the heat to low and simmer for 10 minutes.
  • In a separate bowl, mix together the ricotta cheese, chopped basil, chopped parsley, and grated parmesan cheese.
  • In a small saucepan, heat the milk over medium heat. Add the saffron strands and turmeric powder, and stir until the milk turns yellow. Set aside.
  • In another bowl, mix together the grated mozzarella cheese and grated cheddar cheese.
  • To assemble the Tiranga Lasagna, start by spreading a layer of the meat sauce on the bottom of a 9×13 inch baking dish.
  • Add a layer of cooked lasagna noodles on top of the meat sauce.
  • Spread the ricotta cheese mixture over the noodles.
  • Add a layer of cooked lasagna noodles on top of the ricotta cheese mixture.
  • Spread the saffron and turmeric milk mixture over the noodles.
  • Add a layer of cooked lasagna noodles on top of the saffron and turmeric milk mixture.
  • Spread the chopped spinach leaves and thawed peas over the noodles.
  • Add a final layer of cooked lasagna noodles on top of the spinach and peas.
  • Spread the grated mozzarella and cheddar cheese mixture over the top of the lasagna.
  • Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
  • Remove the foil and continue baking for an additional 10 minutes, or until the cheese is melted and bubbly and the lasagna is heated through.
  • Remove the lasagna from the oven and let it cool for a few minutes before slicing and serving.
