Ingredients

  • 3 medium-sized ripe tomatoes
  • 2 medium-sized cucumbers
  • 1 medium-sized white onion
  • 1/2 cup chopped fresh parsley
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions:

  • Begin by washing the vegetables under cold running water. Use a sharp knife to remove the stem and core from the tomatoes, then slice them into thin wedges. Place them in a large mixing bowl.
  • Peel the cucumbers, then slice them into thin rounds. Add them to the mixing bowl with the tomatoes.
  • Peel the white onion and cut it in half. Thinly slice each half and add it to the mixing bowl with the other vegetables.
  • Add the chopped parsley to the mixing bowl, along with the olive oil and lemon juice. Season with salt and pepper to taste.
  • Use a large spoon to toss the salad gently until all the ingredients are evenly coated with the dressing.
  • Cover the mixing bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to blend together.
