  • 1 cup of broken wheat
  • 1 cup of sugar
  • 1 cup of milk
  • 1 cup of cream
  • 1 cup of ghee
  • 1 cup of water
  • 1/2 cup of mixed nuts (almonds, cashews, and raisins)
  • 1/2 tsp of cardamom powder


  • Step 1: Soak the broken wheat in water for 30 minutes. After 30 minutes, drain the water and set aside.
  • Step 2: Heat ghee in a heavy-bottomed pan. Once the ghee is hot, add the mixed nuts and fry them until they turn golden brown. Remove the nuts from the pan and set them aside.
  • Step 3: In the same pan, add the soaked broken wheat and fry it in ghee for 5-7 minutes until it turns golden brown.
  • Step 4: Add 1 cup of water to the pan and bring it to a boil. Reduce the heat to low and cover the pan with a lid. Let it cook for 5-7 minutes until the water is absorbed.
  • Step 5: Add 1 cup of milk and 1 cup of cream to the pan. Stir the mixture and let it cook for 5-7 minutes until the milk is absorbed.
  • Step 6: Add 1 cup of sugar to the pan and stir well. Let it cook for 5-7 minutes until the sugar is dissolved.
  • Step 7: Add the fried nuts and cardamom powder to the pan and mix well.
  • Step 8: Cover the pan with a lid and let it cook for another 10-15 minutes until the lapsi is cooked and the ghee starts to separate from the mixture.
  • Step 9: Turn off the heat and let the lapsi cool down for a few minutes.
  • Step 10: Serve the UP-style lapsi warm or cold, garnished with some more fried nuts.


  • You can use any type of nuts that you prefer. You can also add some dried fruits like dates and figs to the lapsi.
  • If you don’t have cream, you can use full-fat milk instead. However, the lapsi will not be as creamy as the UP-style lapsi.
