For the Vada:

  • 4 large potatoes, boiled and mashed
  • 1 tablespoon oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 tablespoon ginger-garlic paste
  • 2-3 green chilies, finely chopped
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala powder
  • A handful of fresh coriander leaves, chopped
  • Salt to taste
  • Oil for deep frying

For the Batter:

  • 1 cup gram flour (besan)
  • A pinch of turmeric powder
  • A pinch of baking soda
  • Salt to taste
  • Water (as required)

For the Pav:

  • 8 pav buns
  • Butter for toasting


  • Heat oil in a pan and add mustard seeds and cumin seeds. Allow them to splutter.
  • Add ginger-garlic paste and sauté for a minute until fragrant.
  • Add chopped green chilies and sauté for another minute.
  • Add turmeric powder, red chili powder, and garam masala powder. Mix well.
  • Add the mashed potatoes and salt to the pan. Mix everything together and cook for 2-3 minutes.
  • Turn off the heat and add freshly chopped coriander leaves. Mix well and let the potato filling cool down.
  • In the meantime, prepare the batter by combining gram flour, turmeric powder, baking soda, and salt in a bowl. Gradually add water to make a smooth and thick batter. Set it aside for 10-15 minutes.
  • Heat oil in a deep pan for frying the vadas.
  • Take a small portion of the potato filling and shape it into a round ball. Repeat with the remaining filling.
  • Dip each potato ball into the prepared gram flour batter, ensuring it is well coated from all sides.
  • Carefully drop the coated potato balls into the hot oil and deep fry them until golden brown and crispy. Remove them from the oil and drain excess oil on a paper towel.
  • To assemble the Vada Pav, slit the pav buns horizontally, without cutting them fully.
  • Heat a griddle or pan and spread some butter on it. Toast the pav buns on both sides until they turn light golden brown.
  • Place a vada in between the toasted pav and gently press it to flatten slightly.
  • Serve the Vada Pav hot with your choice of chutney, such as coriander chutney or tamarind chutney.


  • You can add a pinch of asafoetida (hing) to the potato filling for added flavor.
  • For a spicier version, you can increase the amount of green chilies or add a dash of red chili powder to the potato filling.
