  • For the filling, heat oil in a pan and add cumin seeds. Once they splutter, add the chopped onion and green chilies. Saute until the onions turn translucent.
  • Add ginger paste and saute for a minute. Then add the mixed vegetables and cook until they are tender. Add mashed potatoes and mix well.

  • Take one semi-circle and make a cone out of it by joining the straight edges. Fill the cone with 1-2 tablespoons of the vegetable filling. Apply water on the edges of the cone and seal it by pressing the edges together.
  • Heat oil in a deep pan for frying. Once the oil is hot, add the samosas in small batches and fry them until they turn golden brown. Drain the excess oil and serve hot with mint chutney or ketchup.

  • If you don’t want to deep-fry the samosas, you can bake them in the oven. Preheat the oven to 375°F and bake for 20-25 minutes or until they turn golden brown.
