This biryani is a healthy and delicious meal that is perfect for lunch or dinner. Here’s a step-by-step recipe to help you make Zaitooni Subz Biryani at home.

Here is a breakfast recipe that is easy to prepare and delicious to eat.

Ingredients

For the rice:

  • 2 cups Basmati rice
  • 4 cups water
  • 1 bay leaf
  • 4 green cardamoms
  • 4 cloves
  • 1-inch cinnamon stick
  • Salt to taste
  • 1 tablespoon olive oil

For the vegetables:

  • 1 cup chopped onions
  • 1 cup chopped tomatoes
  • 1 cup mixed vegetables (carrots, beans, peas, cauliflower, etc.)
  • 2 green chilies, chopped
  • 1 tablespoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • Salt to taste
  • 2 tablespoons olive oil
  • 1/2 cup yogurt
  • 1/2 cup chopped coriander leaves
  • 1/2 cup chopped mint leaves

For garnishing:

  • Fried onions
  • Chopped coriander leaves
  • Chopped mint leaves

Instructions:

  • Wash the Basmati rice in running water until the water runs clear. Soak the rice in water for 30 minutes.
  • Heat 1 tablespoon of olive oil in a large pot. Add the bay leaf, green cardamoms, cloves, and cinnamon stick. Fry for a minute.
  • Drain the water from the rice and add it to the pot. Fry the rice for 2-3 minutes until it starts to turn opaque.
  • Add 4 cups of water and salt to taste. Stir well and bring it to a boil. Reduce the heat to low, cover the pot, and let the rice cook for 15-20 minutes or until the rice is cooked.
  • Once the rice is cooked, fluff it with a fork and keep it aside.
  • In a separate pan, heat 2 tablespoons of olive oil. Add the chopped onions and fry until they turn golden brown.
  • Add the chopped tomatoes and green chilies. Fry until the tomatoes turn soft and mushy.
  • Add the ginger-garlic paste and fry for a minute.
  • Add the mixed vegetables and stir well.
  • Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt to taste. Mix well and fry for 2-3 minutes.
  • Add the yogurt and mix well. Cook for 5 minutes or until the vegetables are cooked.
  • Add the chopped coriander leaves and mint leaves. Mix well.
  • In a large pot, layer the rice and vegetable mixture alternatively. Start with a layer of rice at the bottom, then add a layer of the vegetable mixture, and repeat the layers until all the rice and vegetables are used up.
  • Cover the pot and cook on low heat for 10-15 minutes.
  • Once done, remove from heat and let it rest for 10 minutes.
  • Garnish with fried onions, chopped coriander leaves, and mint leaves.
  • Your delicious Zaitooni Subz Biryani is ready to be served hot! Enjoy with raita and your favorite side dish.
