Zucchini Halwa is a delicious dessert that’s perfect for any occasion. It’s made with grated zucchini, milk, sugar, ghee, and a variety of spices that give it a unique flavor. This recipe will show you 

how to make Zucchini Halwa in just a few easy steps.

Ingredients

  • 2 medium-sized zucchinis, grated
  • 2 cups of milk
  • 1/2 cup of sugar
  • 4 tablespoons of ghee
  • 1/4 teaspoon of cardamom powder
  • 1/4 teaspoon of cinnamon powder
  • A pinch of saffron threads
  • 1/4 cup of chopped nuts (such as almonds or cashews)

Instructions:

  • Begin by washing and grating the zucchinis. You can use a grater or a food processor to do this. Once the zucchinis are grated, set them aside.
  • In a large non-stick pan, heat 2 tablespoons of ghee over medium heat. Once the ghee is melted, add the grated zucchinis to the pan and stir well. Cook the zucchinis for about 5-7 minutes or until they are soft and slightly browned.
  • In a separate saucepan, heat the milk over medium heat. Once the milk is hot, add the saffron threads to it and let it steep for a few minutes.
  • After the zucchinis are cooked, add the hot milk to the pan and stir well. Reduce the heat to low and let the mixture simmer for about 15-20 minutes or until most of the milk has been absorbed by the zucchinis.
  • Once the milk has been absorbed, add the sugar to the pan and mix well. Continue to cook the mixture over low heat for another 5-7 minutes or until the sugar has dissolved completely.
  • In a small pan, heat the remaining 2 tablespoons of ghee over medium heat. Once the ghee is melted, add the chopped nuts to the pan and sauté them for a few minutes or until they are lightly browned.
  • Add the cardamom powder and cinnamon powder to the zucchini mixture and mix well. Cook for another minute or so to allow the spices to infuse their flavors into the mixture.
  • Finally, add the sautéed nuts to the pan and mix well. Remove the pan from heat and let the mixture cool down to room temperature.
  • Your Zucchini Halwa is now ready to be served. You can garnish it with some additional chopped nuts or saffron threads before serving.
